One Pot Roasted Chicken with braised vegetables

Ingredients-

  • 1 medium chicken (roughly 1.5kg)
  • 3 tbsp sesame oil
  • 200gm baby potatoes
  • 2 medium sweet potatoes (200gm), peeled and cut into chunks
  • 3 medium carrots (200gm), peeled and cut into long batons
  • 1 long sprig of fresh rosemary or thyme, leaves roughly chopped
  • To taste sea salt and black pepper
  • 3-4 chopped garlic cloves
  • Lemon to taste / garnish

Cooking Time -50-60 minutes

Method

For that perfect crusty and juicy chicken, always pre-heat the oven at 180/200°C.
After washing the chicken, pat dry with paper towels.

In your Le Creuset pot, put in the whole chicken. Next, on top of it, drizzle some sesame oil and throw in some chopped garlic cloves for that extra flavour.

Then, add a dash of crushed pepper and sea salt for the seasoned taste. Let the chicken roast for 30 minutes.

Once you see a golden crust, take the chicken out of the pot. Now we need to throw in some ‘colours’ into the dish so it’s pleasing both to the palate and the eyes.

In the bubbling juices left in the pot, add the potatoes and carrots along with that rosemary sprig.

Place the chicken on top of the vegetables and cook for another 25 minutes.
Once you see it cooked, remove the chicken and let it rest for 15 minutes under a foil.

Next, you can crisp up the veggies by leaving them in the oven for another 5-7 minutes as per your preference and portion size desired by your tummy.

Serve with the juices left in the pot, which will act as your sauce, and voila! You are sorted for the night with a happy stomach!

Ingredients for Soaking Dried Fruit

  • 60 gm candied ginger
  • 60 gm black seedless raisins, finely chopped
  • 60 gm golden raisins, finely chopped
  • 60 gm figs, finely chopped
  • 60 gm dried apricots, finely chopped
  • 60 gm dried prunes, finely chopped
  • 40 gm orange zest, finely chopped
  • 1 Cup rum (alcoholic beverage)
  • 1/2 Cup red wine/brandy (optional)

Ingredients for The Cake Batter:

    • 125 gm (1/2 Cup) all-purpose flour
    • 200 gm unsalted butter, at room temperature
    • 100 gm almond flour
    • 200 gram granulated white/ brown sugar
    • 3 eggs, at room temperature
    • 1 tsp salt
    • 1 tsp baking powder
    • 1 tsp vanilla essence

 

Method

Foremost step is to soak your dry fruit mix in the rum. Yum already! This has to be essentially done 1 month before you plan to bake the traditional cake.

Mix the finely chopped dry fruits in an airtight glass jar with 1 cup rum. Shake it nicely and let the rum do its magic in the coming 30 days.

Shake it every 2-3 days for the juices to mix and for effective fermentation. Open the jar only when you start baking the cake.

For preparing the cake pre-heat the oven at 180° C. Beat the butter at room temperature along with sugar and vanilla to form soft peaks.

To this keep adding one egg at a time and whisk the mixture along.

Now, combine this with the dry ingredients and for the final touch add our soaked fruits along with some of its juice. Save some juice for the serving.

Line the pot with parchment paper and add the batter in it. Place it in the pre-heated oven for 50-60 minutes. Once the cake is baked, let it cool for half an hour and finally pour 2-3 tbs of fermented juice over it. Again, let the cake rest for a day before serving it. Serve the yummy decadence with a mug of hot chocolate or coffee. Everyone will surely have a merry time!

Pan fried Salmon in lemon butter sauce

Ingredient Checklist

Olive oil-2 tbsp

Method

Here’s an easy go-to recipe whenever you are short on time. Firstly, let us prepare the sauce. Use a small pan and put it on medium heat. Add 1 tbsp of butter, now throw in the minced garlic and cook for 2 minutes or until slightly brown. Pour in the chicken broth in the pan along with lemon juice. Let it reduce to half the quantity. Now stir the left-over butter and honey into this reduction, keep whisking until a sauce like consistency.

Keep this sauce aside.

In the skillet, add the olive oil and when it’s at a shimmering stage, place your fillets on the skillet. Let the fillet sear for 4 minutes until golden brown. Now flip to the other side for another 3 minutes. Your sumptuous fillet is ready to be gorged on. Take out the fillets on the serving platter, smother the fillets with dollops of your lemon butter sauce, sprinkle the parsley and sit back to enjoy the finer pleasures of life- salmon and white wine!!!

Mediterranean-Roast-Lamb

A Perfect Le Creuset recipe for the Le Creuset Dutch oven!

INGREDIENTS

  • 5 lb of boneless leg of lamb
  • 10 peeled fresh garlic pods
  • 7 stems of fresh oregano
  • 5 stems fresh thyme
  • 1 stem of fresh rosemary
  • 3 tsp of kosher salt
  • 1 Tbsp of sumac spice
  • 1 Tbsp of dried mint
  • 1/3 cup olive oil
  • ½ a lemon to squeeze on top
  • 2 large potatoes diced
  • 2 large onions diced
  • 2 large carrots diced

INSTRUCTIONS

  • Let us marinate the lamb first! To do so, score the top of the lamb skin for creating slits just deep enough to let the flavors from the spices seep in. Choose a crisscross pattern to get the best out of your ingredients.
  • Then salt your lamb with kosher salt. Once you have rubbed the salt in, allow the lamb to sit for 30 minutes. In the meantime, get started with your paste.
  • For the paste, add your garlic, fresh herbs, olive oil and lemon juice in a grinder to get a nice thick paste.
  • Now, rub this paste all over the lamb. Try to get the paste between the cuts so that your lamb comes out oozing with rustic flavors.
  • Roll the lamb and use cooking twine in the middle and both ends.

  • Add the diced potatoes, onions and carrots to it.

French Omelette

INGREDIENTS

  • 2 fresh large eggs
  • Kosher salt to taste
  • Freshly ground black pepper
  • Pinch of red pepper flakes
  • 2 tbsp. of butter
  • 1/4 c. of shredded cheddar
  • 2 tbsp. of freshly chopped chives

DIRECTIONS

  1. Start with beating the eggs in a medium bowl till it forms a smooth white paste with no whites in site.
  2. Then season the liquid with salt, pepper plus a pinch of red pepper flake.

  5. Lastly, when the bottom is set and while top is still a little gooey, simply drizzle cheese generously and add some chopped chives on it. Then fold over the cheese and serve hot.
