Tuna, Avocado & Quinoa Salad Recipe

Tuna, Avocado & Quinoa Salad Recipe

If you are looking for a high-protein meal that has healthy fats from the avocado, this tuna fish, avocado, and quinoa salad recipe might just be for you.

It’s simple and easy to make, healthy, and simply tastes fantastic.

Thanks to the high-protein, this recipe is perfect for when you have just finished your morning workouts or maybe you have been for a surf, and need a little boost to keep you going until your next meal.

Tuna, Avocado & Quinoa Salad Recipe

Ingredients needed:

  • 100g quinoa
  • 3 tbsp olive oil
  • juice 1 lemon
  • ½ tbsp white wine vinegar
  • 120g can tuna, drained
  • 1 avocado
  • 200g cherry
  • 50g feta
  • 50g baby spinach
  • 2 tbsp mixed seeds, toasted

Just in case you use cups to measure your quinoa, one cup of quinoa is around 180g, so 100g is just over half a cup.

Let’s start preparing this delightful salad.

Step 1: Rinse The Quinoa (Optional)

The first step is to rinse the quinoa under cold water.

Well, this step is optional, but if you want to remove the slightly bitter taste of quinoa, then rinse it. If not, then that is fine too.

Step 2: Start Cooking The Quinoa

Once you have rinsed or not rinsed the quinoa, add it into a saucepan.

Now cover the quinoa with water. The perfect ratio of quinoa to water is 2:1, so if you added 100mg Quinoa, add 200ml of water.

Then, bring it to boil, but then reduce to simmer for 15 minutes until the quinoa is fluffy and all the water is absorbed.

Once it has cooked, drain the quinoa and add it into a bowl for it to cool down a little.

Step 3: Make The Dressing

While you are waiting for your quinoa to cook, combine the following ingredients into a jug:

  • Oil
  • Lemon juice
  • Vinegar

Also, add some seasoning to give the dressing an even better flavor.

Step 4: Get Mixin’

Once the quinoa has cooled down a little, mix it with the dressing, alongside the rest of the ingredients into a bowl.

Mix it well, until the dressing covers all the ingredients. That’s it, now enjoy your perfect tuna, avocado, and quinoa salad!
