Quinoa & Black Bean Tacos Recipe

There are so many different types of tasty tacos and there sure can work for anyone.

Chicken tacos, veggie tacos, carnitas & barbacoa tacos, homemade tacos, etc. the list goes on and on.

However, today’s recipe is going to be on quinoa and black bean tacos. Just like the other tacos you already know, they are delicious too.

Quinoa and black bean tacos are stuffed with the taco meat of your choice, ground beef, chorizo, or whatever other meat you prefer. The choice is yours!

Quinoa & Black Bean Tacos Recipe

Ingredients:

  • black beans
  • quinoa
  • a yellow onion & some garlic
  • taco spices (chili powder, cumin & paprika)
  • tomato paste
  • your favorite taco meat (ground beef, chorizo, etc.)
  • water or veggie broth

Believe it or not, that’s all you need!

How to make this quinoa black bean tacos

Making these quinoa black bean tacos is quite simple, all you need to do is follow the five steps below.

Step 1: Preparation

Before you start cooking, just grab all the ingredients you need. Have them ready, as this will allow you to move through this recipe quickly and get everything done perfectly without any trouble later on.

Make sure everything is in reach, so you don’t have trouble finding it later on.

Step 2: Brown Your Meat

Take your preferred taco meat and brown it in the skillet with olive oil. Once the meat is browned, transfer it over onto a plate. Set it aside, while you cook the rest of the mixture.

Here are some great meat types you can consider:

  • Ground beef
  • Turkey
  • Chorizo

Step 3: Sweat The Onion

Next, we need to make the first layer of flavor. This starts with the onion, let it cook in olive oil inside of the skillet for 4 or 5 minutes. Doing this will make the onion go nice and soft.

Also, make sure you season with just a pinch of salt.

Step 4: Toast The Aromatics

Next, you need to toast the aromatics.

After you complete this step, your kitchen will smell amazing! What this step does is that it will add a great amount of flavor to the tacos you’re making.

Add the following ingredients into the skillet:

  • garlic
  • spices (chili powder, cumin, & paprika)
  • tomato paste

Then, let it all cook with the onions for about a minute.

Step 5: Add & Cook The Quinoa

Once you have completed the previous steps and have had the other ingredients cook in the skillet for about a minute, add the quinoa. Once you have added the quinoa let the mixture toast up for a minute or so, then add in either your veggie broth or water.

After you have added the veggie broth make sure to make the mixture boil and then add black beans. Now, allow the mixture to simmer for around 15 minutes. When it’s done, the quinoa should have absorbed the water and be fluffy.

Your taco filling is all ready and done now apart from that you haven’t squeezed lemon juice on top of it yet! Make sure to do so, as its a fantastic addition in flavor.
