Crunchy Thai Peanut & Quinoa Salad Recipe

Crunchy Thai Peanut & Quinoa Salad Recipe

This Crunchy Thai Peanut & Quinoa Salad recipe is no different, as it combines so many great flavors together to make one awesome salad.

Not only does this salad have some tasty quinoa and an amazing Thai peanut sauce, but it also has some delicious vegetables which just add even more to it.

Crunchy Thai Peanut & Quinoa Salad

Ingredients:

Firstly, for the salad you will need:

  • 3/4 cup quinoa (uncooked)
  • 1 ½ cups water
  • 2 cups shredded purple cabbage
  • 1 cup grated carrot
  • 1 cup snow peas or sugar snap peas (thin slices!)
  • 1/2 cup chopped cilantro
  • 1/4 cup thinly sliced green onion
  • 1/4 cup chopped roasted and salted peanuts, for garnish

For the Thai Peanut sauce:

  • 1/4 cup smooth peanut butter
  • Three tablespoons reduced-sodium tamari or soy sauce
  • 1 tablespoon maple syrup or honey
  • 1 tablespoon rice vinegar
  • 1 teaspoon toasted sesame oil
  • 1 teaspoon fresh ginger (I love ginger so I used 2 teaspoons)
  • 1/2 lime, juiced (about 1 ½ tablespoon)

Once you have all the ingredients ready, you can get started and make your Crunchy Thai Peanut & Quinoa Salad following the instructions below.

How To Make Crunchy Thai Peanut & Quinoa Salad

Here are the four steps to making crunchy Thai peanut & quinoa salad.

Step 1: Cook The Quinoa

The first step to making this delicious salad is cooking the quinoa.

Before you cook the quinoa, you can rinse it if you want to, this step is optional.

Then, add the 3/4 cup of quinoa into a saucepan alongside 1 and a half cups of water. The golden ratio of water to quinoa is 2:1, so add double the amount of water you add to the mix. Then, bring the mixture to boil and immediately reduce to simmer afterward.

Step 2: While The Quinoa Is Cooking…

While the quinoa is cooking, make sure to start whisking the peanut butter and tamari together until it’s smooth. If you find it difficult to get it smooth, you can microwave the mixture for around 30 seconds to loosen it up.

Then, once you have done so, add the remaining ingredients and whisk them until it’s smooth again. In case you feel the mixture is a little to thick to add it to the salad, just whisk it in a little more water to loosen this up.

Normally, it won’t be necessary for you to do this, but if it is, don’t worry about it.

Step 3: Combine!

Grab a large bowl and combine all of the following ingredients:

  • cooked quinoa
  • cabbage (shredded)
  • carrot
  • snow peas
  • cilantro
  • green onion.

Toss everything to make it combine well. Once you have done so pour over the peanut butter sauce and toss everything again.

Then, have a taste and if it doesn’t taste delicious yet, try adding just a pinch of salt and toss everything again.

Step 4: Serve!

Now you’re ready to serve your Crunchy Thai Peanut & Quinoa salad.

You can divide the salad into individual bowls and if you want to you can decorate it with peanuts.
