Buffalo Chicken Quinoa Bites

Ingredients you need:

  • 1 ½ cups Chicken, broilers or fryers, breast, meat, and skin, cooked, stewed
  • ¼ cup buffalo wing sauce
  • 2 ounces of cheese, cream
  • 1 Egg whole raw fresh
  • 1 Egg, white raw fresh
  • 1 cup cheese, cheddar
  • 2 tablespoons onions, scallions or spring
  • 1 cup (180g) quinoa (cooked)

How To Prepare Buffalo Chicken Quinoa Bites

Believe it or not, preparing buffalo chicken quinoa bites is actually relatively easy.

Here are the 4 steps to preparing buffalo chicken quinoa bites

Step 1: Cook The Quinoa

Before you can start creating the nice buffalo quinoa mixture, you will need to cook the quinoa first.

Here are the 4 steps to cooking quinoa:

  1. Rinse the quinoa (if you want to remove the slight bitterness)
  2. Add quinoa into a saucepan
  3. For every cup of quinoa add 2 cups of water (2:1 ratio)
  4. Bring to boil, then reduce to simmer
  5. When the quinoa is fluffy and has absorbed all the water it is done

Once you have completed this step move on to step 2.

Step 2: Preheat Oven

The next step is to preheat the oven at 350 degrees F (or 175 degrees C). While the oven is pre-heating, also make sure to grease 24-mini muffin cups.

Step 3: Stir Chicken & Ingredients

Next, you need to stir the following ingredients into a large bowl until they are well-mixed:

  • Chicken
  • Buffalo Wing Sauce
  • Cream Cheese
  • Egg
  • Egg white

Add the cheddar cheese and green onion then stir a little more. Next, take your cooked quinoa and add it to the chicken mixture first.

Then, spoon the mixture into the mini-muffin cups that you prepared earlier.

Step 4: Bake The Mixture

Once you have completed the previous steps, you just need to bake your mixture.

Put the prepared mini-muffin cups with the mixture into the oven and let them bake for 18-22 minutes. Once the bites’ edges have turned a little brown, your quinoa bites are ready.

When this is the case, take them out of the oven and you’re ready to enjoy your buffalo chicken quinoa bites.
