Ingredients

  • 3 pounds of fruit, cut into 1-inch chunks if large.
  • 1½ pounds of sugar (or 3 1/3 cups).
  • ¼ tablespoon of coarse salt.
  • 2 tablespoons of fresh lemon juice.

Pro tip: Use ripe peaches, ones ready to eat because the skin comes off with ease.

Recipe

The first thing to do is to take off the skin from the peach and the easiest way to do it is by blanching the peaches in boiling water for about 35-40 seconds. Next, immediately place them in a cold water bath for another 30 seconds but no more! Make sure not to leave them soaking. Next just start peeling the skin to get that nice pulp from these peaches for your jam.

Now cut them into halves and take the pit out.

Next for the cooking process you should have a heavy base pan something along the lines of the Mauviel’s M’Passion Copper 15-Quart Jam Pan we reviewed above. At a medium-high heat add the peaches, salt and lemon juice to the jam pan, and keep cooking the peaches for about 12 minutes or until you see them softening. Start mashing the mixture with the help of a potato masher to a nice consistent paste like texture or you can leave it a bit chunky if you like.

Now at low heat add the sugar, mix well and let it cook for another 5 minutes. Bring the flame to medium-high heat and let the mixture boil. At this point your jam is cooked but to achieve that thick preserve like consistency you need to slow cook this jam mixture for another 30-40 minutes at very low heat so that the sugar in the peaches starts making it thick and gooey. You will know it is ready when it sticks to the tasting spoon rather than leaving a trail behind. 

Once ready let the jam cool down and then store it in mason jars. Then you are done!
