Sukiyaki Recipe

Now it is time to treat your taste-buds with the best Japanese beef sukiyaki recipe!!

Sukiyaki in simple terms is an ensemble of varied flavors that makes your mouth water with talking about it. Japanese Sukiyaki has several key ingredients which are listed below-

Sukiyaki sauce:

  • 2 tablespoons of sake
  • ¼ cup of Mirin
  • 1 tablespoon of brown sugar
  • ¼ cup of soy sauce

To prepare the sukiyaki:

  • ½ block of firm tofu sliced into ½ inch thick
  • 5 of dried shiitake mushrooms
  • 1 pack of enoki mushrooms
  • 2 cups of Chinese cabbage split into 2 parts
  • 2 cups of tong ho
  • 2 scallions with white and green parts separated
  • 1 bundle of dried mung bean vermicelli noodles or shirataki noodles.
  • 1 tablespoon of vegetable oil
  • 12 oz. of thinly sliced fatty beef
  • 2 cups stock (mushroom soaked liquid, or chicken stock will also do)
  • 2 cups of steamed rice (optional)
  • 1 egg yolk (optional)

Now let us get down to business and start the cooking…

Let’s begin first by preparing the sauce. Add the specified quantity of sake, mirin, brown sugar and soy sauce to the pot and bring this mix to a nice boil, dissolving all the sugar. Now turn off the heat and let it cool in a bowl.

Next we begin with the main ingredients. Soak the vermicelli in water for about 10 minutes. Chop the scallions; separate the white from the green. In the heavy sukiyaki pot, fry the white scallions with 1 tbsp. vegetable oil for 3-4 minutes and add the sliced beef to it. Continue to sear it for 7-8 seconds, next splash a little bit of the already prepared sauce over the beef. Fry these till the beef turns a little brown but still looks a bit pinkish in the middle. Keep the cooked beef aside.

The next step is to add all the sauce and chicken/ mushroom stock in the pot. Simmer it up and now we add the main ingredients. Place the enoki mushroom, tofu slices, rehydrated shitake mushrooms, Napa cabbage and tong ho in the pot in separate sections. Also add the drained vermicelli to the pot. Now cover it with a wooden lid. Bring all of it to a boil. Keep the heat at low so as to cook it for about 6-7 minutes. In the end, add the beef in the same pot. Garnish with green scallions. And voila! Enjoy authentic Sukiyaki hot pot with an egg and rice (optional).
